Spring time is asparagus time. The mild taste of asparagus really nice. This soup is not complicated and you need just few ingredients. To avoid using sugar I cooked the soup with a small apple and it´s really delicious. I hope you like it too. Just give it a try!
- 1 lb / 500 g white asparagus
- 1 small onion, chopped
- 1 small aple, peeled and chopped
- 1 teaspoon extra virgin olive oil
MAKE ASPARAGUS BROTH
Wash the asparagus well. Peel asparagus and cut the hard ends. Place in a pot, cover with 2,5 cups of water and add little salt. Bring to boil, reduce the heat and simmer for 10 minutes. Pass the broth through a fine sieve.
MAKE THE SOUP
Cut off the top of the asparagus (about 1 inch), cut in thin slices and set aside. Chop the rest of asparagus (about 1 inch) and place in a pot, add onion and apple.
Cover the ingredients with the asparagus broth, add the vegetable paste, bring to boil, reduce the heat and let simmer for about 8 minutes, or when tender. Take off the heat, add the olive oil and blend the soup well.
Serve with the the finely sliced tops of the asparagus, lemon zest and few drops of lemon juice. Garnish wit the finely chopped parsley.
